This is a recipe I came up with in an effort to eat healthier. Choose any or all of the vegetables listed and dice into small pieces. Below is what I used today. It was what I had in the refrigerator :)
1 zucchini
1 summer squash
2 spring onions
5-6 button mushrooms
1 small tomato
1 large carrot
1 cup broccoli
1 cup cauliflower
1/4 green pepper
1/2 pound asparagus
1/4 pound green beans
1/2 tart apple
Chop/dice and place in bowl.
Juice of 1 large lemon
2-3 tablespoons balsamic vinegar
1/4 cup extra virgin olive oil
1 tablespoon chopped cilantro, or to taste
salt and pepper to taste
Mix, pour over vegetables, and toss well. Refrigerate until ready to use. The longer it marinates, the more the flavors blend together.
