Farmhouse Cheddar Cheese

I did it! I made my first cheddar cheese and we love it! I followed the recipe from Ricki Carroll's book "Home Cheese Making". I used goat's milk rather than cow's milk, which gave it a sharper taste. My daughter thought it was a little too sharp, so the next time I will either use cow's milk or reduce the quantity of lipase. Here is the finished product!






Making cheese has been so much fun! I can't wait to do more.
