Dehydrating fruits and vegetables is one way to preserve food that requires little expense, little storage space, and little hands on time.
My sister-in-law left for a missions trip to Nicaragua this week and blessed me with her abundance of tomatoes - and she also loaned me her dehydrator! I have a small, inexpensive dehydrator, but the results from it vary each time I use it.
The process is so simple! Wash the tomatoes and slice them into 1/4 inch slices, place the slices on the trays, turn on the machine, and dehydrate until they reach the consistency you want. Tomatoes will take between 4-5 hours.
Dehydrated tomatoes can be used in any recipe that calls for sun-dried tomatoes, or you can add them to soups or stews. How about chopping them and adding to homemade bread? Oh, the possibilities are endless!
Excuse me while I go find other things to dehydrate!
