Homemade Granola

Another family favorite served with homemade yogurt and fresh fruit. My children have also been known to eat it as cereal with milk.

Homemade Granola
3 cups oatmeal (not instant)
1/3 cup brown sugar
1/3 cup honey
1/4 cup oil
1/4 - 1/2 cup coconut
1/2 cup chopped walnuts (can use other types)
pinch of salt
1/2 cup dried cranberries (or other dried fruit)

Mix all ingredients, EXCEPT the cranberries, until thoroughly combined. Spread evenly over a baking sheet that is lined with parchment paper.  Bake at 225F for 1 hour 15 minutes, stirring every 20 minutes to prevent burning. Remove from oven and let cool. Add cranberries and mix well. I store mine in a large ziplock bag.
